The Healthy Potato
Every person on a diet dreads eating potatoes. Potatoes are full of starch and are reputed to be bad for health. However, the wholesome tuber is not unhealthy by itself. You need to take certain precautions while cooking them. Deep fried versions of this humble root vegetable is not recommended if you are watching your weight. Processed French fries and wafers may contain acrylamide which may actually turn toxic when exposed to high temperature.They are also often served in accompaniment with butter, sour cream or other high calorie toppings which are unhealthy for you.
Green potatoes- You may have frequently noticed potatoes with a green tint on them. This occurs when the underground root vegetable is exposed to light and develops certain chlorophyll patches. Although the green portion is fairly harmless it may contain solanine triggering off inflammatory problems of the bowel and causing an increased pain in arthritic patients.
Healthy facts- They are actually a good source of minerals, vitamins and fibers specially if you eat them with the skin. Most of the minerals present in the potato can be found just under its skin. Hence it is not always wise to peel the potato completely before cooking.
They are filling and having a small quantity of potato will satiate your hunger easily. They also contain very little fat making it a healthy option if cooked properly. Potatoes are also known to be rich in potassium, iron, copper as well as vitamin B6.
Healthy potato recipes- Potatoes can be baked, boiled or stewed. Almost all dishes containing this vegetable can be a nutritional alternative to the white bread or rice dishes. You can top baked potatoes with an assortment of salad vegetables instead of butter or cheese. Sprinkling lemon juice on boiled and baked potato is both tasty and a healthy option. The humble Sheppard’s pie is a nutritious and wholesome dish and can form a full meal on its own.
